Puffed Pancakes

- 1 egg
- 1/4 cup milk
- 1/4 cup flour
- A couple drops of almond extract (optional)
- 2 tbsp butter
- lemon wedge
- powdered sugar
- berries (optional)
directions
- Preheat the oven to 450 degrees.
- Whisk the egg and milk in a bowl until combined.
- Add the flour and whisk until smooth.
- Add the almond extract, if using. Whisk until combined.
- Once the oven is preheated, add the butter to the pan and place it in the oven until melted.
- Remove the pan from the oven. Add the batter to the pan of melted butter.
- Bake for 10 minutes, until puffed at edges.
- Top with powdered sugar and lemon juice, or berries – whatever you prefer!
